Tartar Sauce Recipe Ingredients –
2 ounces of mayonnaise, or more if you want it to be a thicker consistency
1/2 ounce of sour cream, or a little less if you want it to be thinner, like a cream cheese consistency
1 ounce of capers (or half of a jar, drained) – as many as you want – I used 1 ounce but that was too much and I had to cut it down more. I think for 3-4 people maybe 1 ½ ounces is about right.
1 ounce of pickles, you can use whatever kind you happen to have. I used a pickle relish which was about the same consistency as the capers
2 ounces of escargot, or more if you’d like – I used 2 ounces and the amount was just right for me. There are many different kinds of snails in different parts of the world so depending on where you’re from, there may be other types that will work just fine.
½ avocado – optional but recommended.
A few drops of lemon juice
1/2 teaspoon of salt, more or less to taste. I used more than half a teaspoon but that amount was just right for me.
Use your favourite mustard (preferably spicy) or use a mix of mustard and mayonnaise as your dipping oil. It’s all up to you!
METHOD –
Wash and clean the escargot, then chop them up. You can also define them if you’d like. Mix all together so the mayonnaise and sour cream are mixed in until everything is mixed together. Let it sit at room temperature for at least an hour to allow it to start firming up.
In a separate bowl, mix the mustard and mayonnaise with the lemon juice and salt until blended together. Use this as your dipping oil.
Best of all, this tartar sauce is better if you keep it in the fridge because if you let it sit on the counter too long, it will just get watery and split. So remember to shake any leftovers to make them more solid again.
