- SHAPE YOUR STEAK AS IF YOU ARE SHAPING A burger or a patty for a sandwich: Unlike the food on a burger or a patty. you can’t just press down on your steak in the centre with your thumb to flatten it out. Steak is stronger than that, so don’t try. Instead, remember how you would shape and flatten meat for a burger or a patty when shaping and flattening steaks for dinner.
- FOLLOW THE STEAK’S RULES: When serving, cut across the grain to avoid making your steak too tough.
- THINK ABOUT THE GRAIN, but don’t obsess: When you’re buying steak, it’s important to know which way the grain is running. Identifying the grain makes it easier to cut against the grain when preparing your steak.
When you’re purchasing a steak, feel along its surface and look to see if there is any difference in texture. This will help you determine which direction the grain is running in.
Once you find it, hold the steak up and look at it with the light behind it. If the light seems to be coming through one side and not the other, that’s the direction in which you should cut.
- CUT UP THE FAT INSTEAD OF CUTTING INTO IT: When grilling a steak, you want as much fat trimmed off as possible. This will help prevent flare-ups and keep your meat from drying out too much during cooking. Cutting up the fat will also help you get more juice out of your meat when it is done cooking.
- SEASON WITH SALT AND PEPPER: Seasoning your steak with salt and pepper will not only add flavour, but it will also help to promote a better sear when grilling. When grilling a steak, a good sear is important because it adds to the overall flavour. it helps the meat retain flavour and moisture and gives your steak an appetising crust.
- ALWAYS BRUSH THE GRILL BEFORE ADDING THE MEAT: Before adding any food, brush the grill with oil or cooking spray to prevent food from sticking. A well-oiled grate will ensure delicious food without too much hassle.
- DON’T OVERCOOK IT: To make sure that your steak is well-done, you can use a meat thermometer to check its temperature. When cooking steak, only remove it from the grill when it reaches an internal temperature of around 150 degrees Fahrenheit. While this may seem like an undercooked temperature to some. it is because when the meat rests. the centre will continue to cook in spite of being removed from the heat source.
- WHEN YOU TRY TO REMOVE THE STEAK FROM THE GRILL, REMOVE IN ONE PIECE: The best way to remove steaks from the grill is with a large spatula. This will prevent charring and keep the meat from breaking up too much during cooking.
- PRE-HEAT THE OVEN: To get a nice crust on your steak, preheat the oven to high for a few minutes before searing it.
